Reports To: Finance Manager / F&B Cost Manager Department: Food & Beverage Job Summary The F&B Cost Controller is responsible for monitoring, analyzing, and controlling food and beverage costs to ensure profitability and operational efficiency. The role oversees inventory control, recipe costing, menu pricing analysis, stock audits, purchasing compliance, and cost reporting while ensuring adherence to company policies and financial controls. Key Responsibilities Cost Control & Analysis • Monitor daily, weekly, and monthly food and beverage costs. • Analyze cost variances and identify areas for cost reduction and operational improvement. • Prepare cost reports and provide recommendations to management. • Monitor key performance indicators related to food and beverage profitability. Inventory Management • Oversee inventory control procedures for food, beverages, and operating supplies. • Conduct regular stock counts and inventory reconciliations. • Investigate inventory discrepancies, shortages, and wastage. • Ensure proper stock rotation and inventory management practices. Recipe & Menu Costing • Develop and maintain standard recipe costing sheets. • Calculate menu item costs and profitability. • Analyze menu pricing and recommend adjustments based on market conditions and cost fluctuations. • Monitor portion control and adherence to recipe standards. Purchasing & Receiving Control • Verify purchase orders, invoices, and receiving documents. • Ensure purchased items comply with approved specifications and pricing agreements. • Monitor supplier pricing and support procurement negotiations. • Review receiving procedures to prevent losses and fraud. Waste & Loss Prevention • Monitor food wastage, spoilage, breakages, and pilferage. • Implement measures to minimize losses and improve operational efficiency. • Conduct investigations into unusual consumption patterns and inventory variances. • Work closely with kitchen and service teams to improve cost awareness. Financial Reporting • Prepare daily, weekly, and monthly food and beverage cost reports. • Analyze sales, consumption, and inventory data. • Support month-end closing processes related to F&B operations. • Provide management with insights on profitability and cost trends. Compliance & Internal Controls • Ensure compliance with company policies, procedures, and financial controls. • Maintain accurate records and supporting documentation. • Assist with internal and external audits. • Monitor adherence to approved purchasing and inventory processes. Collaboration & Support • Work closely with Executive Chefs, Restaurant Managers, Storekeepers, and Purchasing teams. • Train operational staff on cost control procedures and inventory management practices. • Support budgeting and forecasting activities related to food and beverage operations.
